Josh's American Breakfast Sandwich

This is a sandwich I've been making and loving for the past 5+ years, ever since I had started cooking for myself in undergrad. As a result this is a great sandwich that's super cheap and easy to make, and makes the most out of its limited ingredients. One of the best things about this is how full it makes you feel in the morning. I've had a lot of days where I just have to skip lunch, and this sandwich powers me through with a nice combination of ingredients.

  1. Put your sourdough bread into the toaster, set to lightly browned
  2. While bread is tosating, begin cooking bacon at low heat
  3. One bacon has let off enough fat, add in eggs at low heat
  4. Cook eggs for 2 to 4 minutes until soft-fried
  5. Move toast to a plate, remove eggs from pan and add to plate
  6. Turn up heat and cooking bacon on medium until crispy
  7. Add bacon to sandwich
  8. With the pan on a low heat, cut up 1/3rd large red onion into thin slices, and add to pan
  9. Cook onion in remaining bacon grease, increase temperature after 2 minutes to medium
  10. Cook onions until wholy brown, or edges are black.
  11. Remove, plate, and serve with hot sauce, ketchup, salt, pepper, mayo, and the like to your own taste.
